Unrectified Wheat and Rye spirits are blended and re-distilled. Very small quantities of Plum and Apple spirit (aged for a minimum of 50 years in oak) are then added and rested to allow the character to develop. The vodka is retested and if satisfactory is put through a very gentle and non invasive filtration process that only takes out coarse impurities but allows character and flavour to remain.
Tasting Notes:
Nose – moves quickly from mellow to full-bodied fruitiness: fresh, ripe apples, rich dried fruit, then honey, with an underlying layer of rye bread.
Palate – elegant, indulgent mouthfeel. A light richness emerges and the intensifies into a lemon freshness with orange marmalade notes. Followed by a creaminess with grain and rye bread notes. All emerging into a finale of luscious, rich-dry flavour.
Finish – rich-dry balance, with emerging fruit notes of apples and prunes.
